Mini Buffalo Chicken Pizzas

This week, Pastorelli is featuring this recipe created by food blogger Haylie Abele of Our Balanced Bowl. These mini buffalo chicken pizzas are spicy and delicious. They make for an easy weeknight meal or a great game-day appetizer. Cut the mini pizzas into small slices and set them out with a bowl of ranch for folks to dip them in and you’re ready to go!

Begin by baking the chicken breast at 350 degrees until it gets extra tender and juicy.

Once it’s done pull the breast apart with a fork and add in 4 tablespoons or so of hot sauce, a little bit of melted butter and mix together. Add more if you want it extra spicy.

For the base layer sauce for the pizza, combine the pizza sauce with some more hot sauce and spread evenly on the pizza crusts.

Next, drizzle ranch dressing then add a layer of mozzarella cheese on the pizzas. Add on your chicken and then sprinkle with more cheese.

Bake for about 10 minutes and then broil for 1-2 minutes to make sure the cheese gets extra golden and melty!

Garnish with chopped green onions, extra ranch and hot sauce and enjoy!
