Spiced Shakshuka

Looking for a different way to use that Pastorelli pizza sauce? Try this easy recipe for a spiced Shakshuka, or as they would call it in Italy “uova al purgatorio” or “eggs in purgatory.” This Middle Eastern breakfast staple comes together with just a few easy ingredients! The paprika and cumin perk up the pizza sauce for a savory start to your day! Next time you’re looking for an easy and healthy weeknight meal or a brunch dish, try this easy dish.

Ingredients:

  • 3 cups Pastorelli Pizza Sauce
  • 2 tablespoons olive oil
  • 1 sweet onion, thinly sliced
  • 2 garlic cloves, chopped
  • 1 large red bell pepper, seeded and thinly sliced
  • ⅛ teaspoon cayenne
  • 1 tsp paprika
  • 1 tsp ground cumin
  • Salt and pepper to taste 
  • 2 cups crumbled feta cheese 
  • 4 large eggs
  • Chopped parsley for serving 
  • 1 fresh baguette 

Directions:

Preheat oven to 400 degrees.

In a large skillet, heat oil over low heat.

Cook onion and pepper until soft, about 15 minutes.

Mix in garlic, spices and tomato sauce, cook until thickened, about 10 minutes.

With the back of a spatula, make small “wells” in the tomato mixture.

Crack eggs into the wells and carefully place skillet in oven.

Bake until the eggs are set, about 7 minutes.

Top with feta and parsley and serve with warm crusty bread.
